While we were at the North American Vegetarian Society's Summerfest, we met a firecracker of a woman we knew had to be mentioned on our website. Cathi DiCocco is a vegetarian cooking instructor as well as the chef/owner of the almost-eponymous Café DiCocoa in Bethel, Maine. Through her involvement in her community, she is able to spread the practical advice and wisdom necessary to help others learn how to maintain a meatless existence, and she does it with a great deal of energy, wit and common sense. She's a true dynamo - very few could remain uninspired by her infectious humor and warm disposition. Cathi DiCocco is a walking testament to the vigorous good health and vibrant energy often associated with vegetarians, and just the presence of this very spirited woman should be enough to influence even the most stodgy among us to give tofu a chance. Her café has a revolving menu based around natural foods. The reason why she rotates and includes new items on her daily menu is so Café DiCocoa can remain flexible, eclectic and experimental: Cathi doesn't want to get locked in to preparing the same dishes all the time. She is also committed to using the freshest seasonal vegetables available, with an emphasis on locally grown organics whenever possible. A glance through her menu shows that on Saturdays last year from December through April, her café spanned the globe, in what was termed a "global blitz of ethnic cuisine." Adventurous epicureans in a small town in Maine got to enjoy food from North Africa to South East Asia and all points in between in the friendly confines of Café DiCocoa. Be warned - on her promotional materials Cathi advised people to get festive for these culinary tours, and we sense that she means it. This is the time to break out the sari or the Swedish clogs: there's no room for awkwardness at Café DiCocoa. So drop by her place and give Cathi a warm hello and a hug for us.
