Teriyaki Barbequed Tempeh

This fabulous vegan recipe came to us all the way from Lawrence, Kansas, from Marla's friend and Keegan's mom Karen. That's Keegan on our right, of course.

16 oz. tempeh
1/2 cup tamari or soy sauce
1/4 cup water
1 Tbsp. maple syrup
1 Tbsp. vinegar
1 Tbsp. finely chopped scallion
1 clove garlic, minced
1 1/2 tsp. ground ginger

To prepare:
Cut the tempeh lengthwise 3 times, and widthwise 3 times, so you have nine pieces. Put in a baking dish.

Add all the other ingredients together in a bowl.

Pour the marinade over the tempeh and swish it around with a spoon or spatula to make sure the tempeh's evenly coated. Let this marinate for at least 30 minutes.

Cover the baking dish and bake it at 400 degrees for 25 minutes, turning over the tempeh at least once.

Delicious over rice!
