Valerie Vegiburger's Famous Lentil-Rice Burgers

When Val and her friends are out in the streets extolling the joys of veganism, this is one of the recipes she likes to hand out. Almost all of these ingredients can be found organically in any health-food supermarket, store or co-op.

1/2 cup cooked white rice, cooled
1/2 cup cooked lentils
1 small sweet potato, peeled, cooked and minced
6 - 8 spinach leaves, rinsed, blanched and finely shredded
1/2 cup chopped fresh mushrooms
1 tsp. low-sodium soy sauce
salt and pepper to taste
1/2 to 3/4 cup dry bread crumbs
1 Tbsp. finely chopped cilantro

Combine rice, lentils, sweet potato, spinach and mushrooms in a large bowl. Add soy sauce, salt and pepper. Add bread crumbs and cilantro; mix well. Refrigerate for 20 minutes.

Form mixture into 6 to 8 patties. Oil a vegetable grill generously. Grill for 3 - 4 minutes on each side, until medium brown.

Per patty: 131 calories; 0.6 grams of fat; 0 cholesterol
