Savory Basil Raw Soup When the weather starts getting warm, we start leaning more toward fresh fruits and vegetables in their raw-and-bursting-with-flavor state. Raw foods are not only more cooling in the summer months, but many believe that it is by far the healthiest way to eat throughout the year. The theory is that when one cooks food above 112 degrees, enzymes inherent in the food are destroyed, causing the body to expend metabolic enzymes for digestion, which depletes the body's limited reserve. Many raw foodists believe that this diet rejuvinates the body and enhances the anti-aging process. This raw soup is fresh and vibrant like a pesto. Try it and see what you think... 1/2 cup chopped tomato Combine all the ingredients in a blender or food processor, and process until finely chopped, but still lumpy. Pour into soup bowls and enjoy. Garnish with fresh basil leaves if desired.
