A Taste of Thai

Thai is one of my favorite cuisine's in the world, but I don't get to enjoy it often because authentic Thai restaurants often use unlisted animal ingredients like stock and fish sauce or flakes in their dishes. However, you can make your own Thai food easily at home, and that way you can ensure that it's vegan. This is an especially good time of the year for Thai food, as it is warming and filling on cold evenings. Why not make a Thai-themed dinner with tea and chopsticks? Here are some favorite recipes from the Vegan Street kitchen.

Thai Salad with Spicy Citrus Dressing

A simple salad that's packed with flavor and goodness.

Dressing:
1/2 cup orange juice, fresh-squeezed
1/2 cup lime juice, fresh-squeezed
2 tsp. tamari
freshly ground pepper, to taste
1 Tbsp. minced chilies, pref. serrano or jalapeño
2 tsp. minced garlic
1 tsp. minced ginger
3 Tbsp. vegetable oil

Salad:
I head lettuce, torn into bite-sized pieces
1 tomato or 3 plum tomatoes, chopped into bite-sized chunks
1 large cucumber, peeled and cut into rounds
4 green onions, thin-sliced
1/3 cup coarsely chopped fresh cilantro leaves

In a jar with a lid, combine the first 4 dressing ingredients. Cover and shake well. Add the rest of the dressing ingredients and shake well.

In a large bowl, put all the salad ingredients, and mix well to combine. Drizzle on about 1/2 cup of the dressing, toss well and serve immediately.
