Z U C C H I N I

Zucchini Bisque
This is a luscious and smooth bisque all will enjoy.

2 yellow onions, chopped
5 - 6 cups zucchini, sliced
1 cup carrots, thinly sliced on the diagonal
4 tsp. olive oil
2 1/2 tsp. sea salt
2 tsp. tamari
5 cups water
2 vegetarian buillion cubes
1/4 tsp. black pepper
16 ounces silken tofu, crumbled

In a large soup pot, sauté the onions, carrot and zucchini in the oil, together with the salt and tamari, for about 5 minutes over medium heat.

Add the water, buillions, pepper and tofu, and cook for another 5 minutes. Blend the ingredients until smooth, return to the soup pot and heat for several more minutes.
