T O M A T O E S

Delicious Gazpacho

Again, tomatoes aren’t really my favorites, so I like to use them up in large quantity dishes that I actually enjoy. Gazpacho is a great raw soup for hot days.

3 cups vegetable juice
1 medium yellow onion, chopped
2 medium tomatoes, diced
1 green pepper, minced
3 cloves garlic, crushed
1 cucumber, diced
2 Tbsp. lemon juice
2 Tbsp. red wine vinegar
2 tsp. minced fresh basil (or 1 tsp. dried)
1 tsp. cumin
Dash of hot sauce
2 Tbsp. olive oil
Salt and pepper to taste

Combine all the ingredients and chill for several hours. Serve cold
