Thanksgiving is a celebration of the harvest, and an opportunity to show gratitude for nature’s bounty and our good fortune. Could there be any more significant day to show our thanks through delicious vegan meals shared with friends and family?

Personally, I like to showcase all the lovely gifts of the earth through lots of smaller, interesting dishes rather than have the meal be focused on a centerpiece. I also like to mix traditional ingredients with unusual arrangements. However you put together your vegan harvest meal, enjoy the day!

The menu:
Yummilicious Cornbread
Spiced Bulghur Salad
Yam Harvest Stew
Apple Oat Bake


Yummilicious Cornbread

This stuff will hot the spot, especially if served warm.

1 cup cornmeal
1 cup unbleached white flour
2 tsps. baking powder
2 tsps. unbleached sugar, like Turbinado
1 tsp. salt
2 Tbsps. vegetable oil
1 1/2 cups vanilla soymilk
1/2 cup corn kernals

Preheat the oven to 350. Combine the dry ingredients. Add the oil, soymilk and corn kernals, and mix well. Pour into a lightly oiled 8 X 8-inch pan, and bake for 30 minutes. Let cook for 10 minutes before serving.
