Yam Harvest Stew This is a delciious, comforting and substantial stew, perfect for a meal with friends. 1 1/2 tsp. ground cumin Place the spices in a skillet and stir over low heat until they release their scent. Add the onion, garlic, ginger and red lentils and stir to coat with spices. Add the yam, carrots, water, tamari, squash and cauliflower and simmer for about 20 minutes, until lentils and squash are soft. Add the grated coconut, sea salt, pepper and cilantro and simmer for a few more minutes, until all is heated through. |
