Big Ol' Salad
(Serves four)

There's little more nutritious or refreshing than a main course big salad that emphasizes fresh veggies. Of course, substitute whatever your favorites are for what I have listed.

8 cups mixed greens (arulgula, spinach, mesclun mix, etc.)
1/2 red or green cabbage, shredded
2 carrots, grated
1 zucchini, julienned
1 beet, julienned
1/2 bunch broccoli, broken into florets, steamed until bright green
1 cucumber, sliced
Handful of olives (I like kalamata), sliced or whole
1 cup drained garbanzo beans
6 - 8 artichoke hearts, cut into smaller pieces
1/2 red onion, sliced in thin half-moons
1 cup marinated tofu, cut into cubes
Toasted sunflower seeds to sprinkle on top

Add the ingredients in a large bowl, toss and enjoy!
