St. Patrick's Day is really easy to celebrate as a vegan. Guinness Beer, which was for years brewed using isinglass (real gross, don't ask) is now completely vegan. There are many great recipes online for vegan corned beef, plus it's on the menu at lots of restaurants. Also, Unreal Deli has a wonderfully authentic version you can find in the supermarket.
