Even before I was vegan, honey wasn’t my thing but with hot honey still, well, hot, I thought it would be a good time to experiment with a bee-free version. Agave nectar has similar flavor notes and consistency to honey so it’s a natural replacement. This liquid sweetener, which thickens as it cools, is great for dipping vegan chick’n nuggets, drizzled over pizza or on cornbread, stirred through roasted veggies or as a condiment on a charcuterie board. We have been keeping a jar in the refrigerator for any time we want a spicy-sweet flavor to boost our meals. It’s also quick and easy to make.
1 cup agave nectar 1 - 2 tablespoons crushed pepper flakes 2 teaspoons apple cider vinegar or fresh lemon juice without seeds Pinch of salt
In a small saucepan over medium-low heat, cook and simmer the agave and pepper flakes for ten minutes, stirring often. Remove from the stovetop, add the ACV or lemon juice and punch of salt, cool and allow the flavors to meld for at least 30 minutes. Strain the pepper flakes out in a fine mesh strainer into a container, push the last syrup out with the back of a small spoon and refrigerate. It will thicken in the refrigerator.
