I am taking a little break from our regular PUMPKIN ALL THE TIME recipe content to bring you a recipe featuring another autumn favorite, apple cider. This recipe was inspired when I saw someone posting about apple cider doughnuts and I started thinking about that flavor profile in waffle form. Tada! These waffles are fluffy, gently sweet, easy to make and whip up in a snap. Best of all, they taste like the season itself. Oh, plus all the little waffle squares give you extra spaces for getting maple syrup, jam, vegan butter or whip in all the little nooks and crannies.
1 tablespoon ground flaxseed 3 tablespoons aquafaba or water 2 cups gluten-free all-purpose flour (I used this one) 2 teaspoons baking powder 1 teaspoon baking soda 2 teaspoons apple pie or pumpkin pie spice blend Pinch of salt 1 cup apple cider ¼ cup applesauce 2 tablespoons pure maple syrup
Str together the flax and aquafaba or water in a cup. Let gel in the refrigerator for fifteen minutes. Start heating up your waffle iron. Lightly oil if necessary.
In a medium bowl, whisk together the flour, baking powder and soda, spice blend and pinch of salt. In the middle, pour in the flax mixture, apple cider, applesauce and maple syrup, stirring to smoothness with a large spoon.
Follow your waffle maker’s instructions and cook all the batter. Serve warm.
