A great way to use up a l’il extra cake (there is such a thing???), put cake that turned out a little too dry or fell apart to good use and/or stray from the usual birthday dessert, the Birthday Cake Milkshake is easy to make and festive as all get out. Premade cake, boxed cake, even cupcakes are all good. I did not add cake crumbles with frosting to my recipe because I wasn’t sure I’d like that texture but you do you. I like the contrast of the vanilla ice cream and chocolate cake, but any flavor combination that speaks to you, go for it!
2 cups vegan vanilla ice cream 1 cup non-dairy milk, vanilla or plain 1 cup vegan cake, crumbled with your fingers, reserving 1 tablespoon for the top Vegan spray whipped cream Vegan, slavery-free chocolate syrup Sprinkles, chopped nuts, reserved cake crumbles
First, take a large drinking glass and spray whipped cream around the rim. Drop decorative sprinkles around the whipped cream and don’t despair if some gets into your glass. This treat is all about having fun and more sprinkles = more fun. Place in the freezer for 1o - 15 minutes to solidify a little.
In a blender, mix the ice cream and milk until it’s smooth. Finally, pulse in the cake crumbles, reserving one tablespoon for topping.
Remove the decorated glass from the freezer, drip some chocolate syrup into the glass and around the inside edges. Pour in your milkshake, decorate with whipped cream on top, more cake crumbles and additional sprinkles. Serve with toasted chopped nuts if you like, a maraschino cherry and, just to gild the lily a little, a birthday candle, whether or not it’s your birthday.
