Building a colony in a place that doesn't normally support life is a very delicate operation. Everything has to be completely recyclable and self-propagating. Food, water and even air have to be able to last forever. Everyone's life would depend on everything contributing as much as it is taking. In this environment, the human diet would have to be completely vegan.
Meanwhile, back here on Earth, animal agriculture devours the vast majority of arable land and is destroying much our remaining wild spaces in the process, and is also sucking up a wildly disproportionate amount of the world's freshwater and belching more climate killing greenhouse gases than all the planet's cars, trucks, trains, ships and aircraft combined – while providing only a tiny proportion of our food supply in return.
Thousands of science-fiction stories feature scenarios where desperate humans rush to colonize other planets after destroying our own. We really need to focus on a lifestyle that protects our own home, and ending animal agriculture is the best place to start.
