Two great things (macaroni and cheese + pesto) go together beautifully. Who could have guessed? Well, I’ve been dreaming about combining the creamy, comforting staple pasta dish with the lively, herbaceous paste for a while and I made it last night. It turns out they harmonize together beautifully. If you’ve got some basil from summer you’re trying to figure something to do with, this is the perfect vehicle for it.
One recipe vegan macaroni and cheese sauce, homemade or purchased (like this one) ½ cup vegan pesto, homemade or purchased (like thisone) 16-ounces pasta, regular or gluten-free ½ cup breadcrumbs or panko, regular or gluten-free (optional)
Make your pasta according to the package instructions. Drain, rinse and while still warm, return to the pan. Add the cheese sauce and pesto, stirring until heated through. Top with optional breadcrumbs and serve warm.
