In an effort to boost the health of their young people as well as advancing some much needed environmental protection, the school district of Salvador in the Bahia region of Brazil have changed the school lunch program for its 170,000 students to be centered around vegetables, grains, legumes and fruits.
“The idea is to instill and create long-term changes in students’ eating habits. Today in Brazil we know that children, mainly from the poorest strata of the population, which is the target public of the municipal school system, do not consume the recommended servings of fruit and vegetables, and protein sources are concentrated on products of animal origin, so our proposal is that we can encourage our children to form a healthier palate for the rest of their lives,” says Municipal Secretary of Education, Marcelo Oliveira
This switch will also free up more than 40,000 acres of land, save 100 million gallons of water and keep 75,000 tons of greenhouse emissions out of the atmosphere.
