When it’s September and you’re in an Autumn mood but have summer temperatures, it may be just the right occasion to indulge in this chilly delight. Simple, quick and inexpensive to make, Banana-Pumpkin Soft Serve just needs a food processor or high-speed blender, a little time pulsing and scraping down the sides, and you will have a sugar-free but delicious, seasonal treat. We always like to have some bananas in the freezer for smoothies but diverting some from the stash into this cool confection is well worth it. You want to use very ripe bananas with brown spots on the peels because they are the sweetest. If you did want a sweeter version of this, substituting the same amount of pumpkin pie purée would do the trick.
2 very ripe bananas, peeled, cut into slices and frozen ½ cup pumpkin purée (not pumpkin pie purée) 1 teaspoon pumpkin spice blend
Transfer the banana slices to the food processor or blender and pulse until the large pieces are broken down into smaller crumbles, then turn to processing until smooth. You will need to scrape down the sides occasionally. Add the pumpkin purée and pumpkin spice blend, and process until smooth. Scoop and serve; sprinkle a little more pumpkin pie spice on top for a little pretty effect.
