Farina Cream of Wheat was one of those comfort foods from childhood. I developed a sensitivity to gluten at some sad point of my life so I switched over to cream of rice when my oatmeal game was getting stale. It has been years since I’ve had cream of rice, though, and when I was looking in the hot cereal section of the grocery store, I just wasn’t finding it anymore. This got me to thinking that it must be something I could make just out of the rice I had at home and a blender. I was right! I have a high-speed blender but I don’t think you need a fancy one to do this, you might need to blend longer, though, to powderize it. If you’re looking for a very customizable and warming breakfast for winter, this is your new comfort food.
¼ dry white rice (I used basmati) 1 cup unsweetened non-dairy milk ¼ cup water 1 tablespoon maple syrup 1 tablespoon vegan butter Whatever toppings you like, for example, bananas, pecans, walnuts, seeds, berries, plus more maple syrup.
Put the rice in a dry blender and blend until powderized. For me it was one minute on high.
In a medium pan, combine the non-dairy milk, water and ground rice over medium-low heat. Stir until it starts to simmer and it thickens. Keep stirring. Add the maple syrup and vegan butter, stirring until mixed.
Pour into a bowl and top as you like.
