Frozen Banana and Peanut Butter Soft Serve In the summer, we always have frozen bananas on hand for a quick, sugar-free treat that is creamy and tastes so decadent. This is one of our favorite variations. Instead of serving immediately, you can also scoop out the smooth banana mixture into an airtight container, freeze and scoop out. This will be a little more like traditional ice cream than soft-serve. Both are delicious!
Frozen Banana and Peanut Butter Soft Serve
2 very ripe bananas, peeled and frozen overnight ¼ cup (plus more if needed) plain, unsweetened dairy-free milk 1 - 2 tablespoons peanut butter 1 teaspoon pure vanilla extract
Slice the frozen bananas and place in the food processor. Pulse until the are broken into small crumbles, about 30 - 35 times. Add the milk, peanut butter and vanilla. Process until smooth and serve immediately.
