I like to make Pride-themed recipes in June and this month was no different. These are super fun with the rainbow flag represented in fruit form across waffles with a fluffy interior and crisp exterior. They are deceptively simple to make and perfect for a brunch celebration. I recommend making your waffles a little bigger than normal to give you as much of a canvas to work your Pride magic on.
I used blackberries, blueberries, sliced kiwi, sliced banana, sliced golden berries and raspberries for the rainbow colors from indigo to red. Use what you like!
2 cups gluten-free all-purpose flour (this one is my favorite), ideally one with xanthan gum 4 tablespoons granulated sugar 1 tablespoon baking powder ¼ teaspoon salt 1¾ cups non-dairy, plain, unsweetened milk ¼ cup neutral oil or melted vegan butter 6 tablespoons JUST egg, shaken 1 teaspoon pure vanilla extract Vegan whipped cream Six kinds of fruit in purple, blue, green, orange, yellow and red, ready to go.
In a large bowl, stir together the flour, sugar, baking powder and salt. In another large bowl, whisk together the vegan milk, oil, JUST egg and vanilla until emulsified. Pour into the bowl with the flour and stir until smooth.
Heat up your waffle iron to the medium-heat setting. I find even with a nonstick iron, it’s best to spritz with a little oil. Pour a little more than half a cup of batter at a time into the heated iron, remove when your iron indicates its ready, allow to cool a bit so the whipped cream won’t melt and decorate with six stripes of whipped cream and your prepared fruits.
