Ever crave the flavors and essence of something but in smoothie form? This is what brought today’s recipe to my mind: How can I recreate the baklava experience in my blender? Here we are! Baklava - rich, gooey, altogether unique - is a classic Middle Eastern treat with crispy sheets of filo dough tightly pressed against gorgeously aromatic rosewater, nuts and a liquid sweetener, usually honey. To veganize the recipe, I swapped the honey for the options recommended below, though you can also use one of the commercial vegan honeys that are on the market. I used oats in the place of filo to make a thicker, more substantial smoothie and did not skimp on intoxicating flavor. You can find food-grade rosewater online, Middle Eastern markets or in the “ethnic section” of many large grocery stores.
1¼ cups unsweetened vegan milk 2 tablespoons maple syrup, agave nectar, date syrup or two pitted medjool dates 2 tablespoons food-grade rosewater 1 teaspoon pure vanilla extract 2 tablespoons unsalted pistachio nuts 2 tablespoons quick-cooking oats 1 banana, peeled (frozen is best for a creamy smoothie) 1 teaspoon ground cinnamon 1/8 teaspoon ground cardamom 1 cup ice Extra chopped pistachios and ground cinnamon for top, optional
Add to your blender except for the additional toppings and blend until smooth. Add additional toppings before drinking.
