A new study found that individuals with a high level of carotenes in their blood are likely to have a lower degree of atherosclerosis in their arteries, consequently reducing the risk of cardiovascular diseases. Carotenes are abundant in carrots and other yellow, orange, and green fruits and vegetables like spinach, tomatoes, and sweet potatoes. Eat plenty of these, and you may well see fewer medical professions and have fewer reasons to say, "What's up, Doc?".
