Looking for a quick, simple, easy, cool and delicious confection you can enjoy without going to the yogurt shop and customize just to your liking for a fraction of the cost (oh, and the sugar)? This right here, this is what you do! It takes just a food processor or blender, a freezer and a little bit of time for, well, frozenness and you’ve got a perfect treat you can whip up on a moment’s notice.
If you like a more sour frozen yogurt, add the less sweetener amount. If you are fine with it being more of a thick soft-serve than a scoop, you can also eat it right away rather than freeze and scrape.
2 5.3-ounces non-dairy vanilla Greek yogurt (or plain) (I used Kite Hill) 1 ½ cups frozen fruit (I used dark sweet cherries) ⅛ - ¼ cup pure maple syrup Pure vanilla extract (Optional: if you used plain Greek yogurt, you may want to add a teaspoon or two)
Place the yogurt in your freezer for 30 minutes.
Put the frozen fruit in a food processor or blender with the maple syrup and optional vanilla. Process until the fruit is broken up. Add the yogurt. Process or blend until it is smooth and either eat right away as a soft-serve or transfer to a loaf pan and place back in the freezer. Scrape with a large spoon after fifteen minutes. Place back in the freezer and freeze for another fifteen minutes. Scoop and serve when you are ready.
If you plan to eat this at a later date, cover the pan with plastic wrap in the freezer and allow it to come to temperature before scooping. It will be dryer.
