The trick to this luscious shake is to freeze your pumpkin purée in an ice cube tray to make it extra refreshing and creamy. Spoon your purée the tray the night before you want to make this shake – or any time really – and you will be good to go in the morning.
Once the purée cubes are frozen, they can be popped out and stored in a freezer bag to have at the ready for any time you want this delicious shake.
1 cup water ¼ cup cashews 1 ripe banana 1 teaspoon pure vanilla extract 2 dates, pits removed, or 1 – 2 tablespoons pure maple syrup 3 frozen cubes pumpkin purée 3 -4 more regular ice cubes A few shakes ground cinnamon and/or nutmeg
Combine in your blender and blend until smooth. Add more water if it’s too thick.
Sprinkle more cinnamon or nutmeg on top to impress fancy people before serving.
