Hey, we got word recently that Peet’s can make you a vegan Pumpkin Latte. That’s awesome! (Remember to talk to your barista to ensure that it is prepared vegan: according to the comments, it needs to be made with the light powder (?) to be vegan.)
Anyway, maybe you don’t have a Peet’s near you or maybe you just would rather make your own. Here’s a recipe to do just that. It’s a lot less expensive and you can tailor it just to your tastes.
1 cup brewed coffee ½ cup non-dairy milk (I used the new pumpkin milk at Trader Joe's but any non-dairy milk would be fab) 2 tablespoons pumpkin purée 2 tablespoons maple syrup or sweetener or choice 1 teaspoon pure vanilla extract ½ teaspoon pumpkin pie spice blend 1 – 2 tablespoons vegan whipped topping
In a medium saucepan, heat the coffee, milk, pumpkin purée, sweetener, vanilla and spice blend. Whisk to remove any lumps.
Pour into a cup and top with vegan whipped topping or enjoy without.
