Thanksgiving here is about modeling to the world that vegan food is food and all about an abundant array of colorful, satisfying, flavorful dishes. It’s hard to believe there was ever a time that people believed vegan food was a sacrifice, something you had to power through to stay alive, but there was no joy there, especially not on this most food-centered of holidays. Well, I think vegan recipe developers, bloggers, authors and chefs have done excellent work of disabusing the public of this myth and while I don’t consider myself a giant in the category, I do think we’ve created some fabulous recipes over the years worthy of your Thanksgiving table and celebration. While Thanksgiving seems to be all about the sides, let’s not diminish how important it is to have a main attraction. Our options vary between simple, like the stew, to much more involved showstoppers, like the Whole Shebang Holiday Roast. It really depends on how much time you have, how much you want to impress, how much effort you want to put in: There is an option for everyone. As someone who loves “peasant” food, don’t feel like you’re phoning it in with a simpler main dish as it can be every bit as enjoyable as a more elaborate one.
